<P>PROBLEM TO BE SOLVED: To provide food material comprising potato peel, to provide a method for producing the food material, and to provide food using the food material. <P>SOLUTION: The method for producing food material comprises the following process: a harshness elimination process of soaking potato peel discharged in a process of processing food using potato as raw material, or peel directly removed from potato in acetic acid water with a prescribed concentration followed by washing the peel with running water; a drying process of drying the peel whose harshness is eliminated in the harshness elimination process; a first roasting process of roasting the peel dried in the drying process at a prescribed temperature for prescribed period of time so as not to be scorched; a sterilizing process of sterilizing the peel subjected to the first roasting treatment in the first roasting process; a second roasting process roasting the peel sterilized in the sterilizing process at prescribed temperature for prescribed period of time so as to be scorched brown; and a pulverizing process of pulverizing the peel roasted in the second roasting process into prescribed sizes.
