<P>PROBLEM TO BE SOLVED: To provide a method for producing a scallop adductor muscle made flatter than a conventional one in good productivity. <P>SOLUTION: The scallop adductor muscle having a flatness ratio, i.e. the ratio of diameter/thickness (height), of ≥1.8 and a well-regulated shape is obtained by flattening the adductor muscle taken out by opening the shells of a fresh scallop by imparting electric stimulation, and freezing the adductor muscle directly. The flattened adductor muscle obtained by imparting the electric stimulation and being frozen has good texture (resistance to the teeth) after being thawn, and is also suitable for eating in raw. <P>COPYRIGHT: (C)2007,JPO&INPIT |
