PURPOSE:To provide a defoaming agent for bean curd, containing a polyricinoleic acid ester, soybean phospholipid, one or more salts selected from Ca or Mg carbonate, phosphate or silicate, and animal or vegetable oils or fats as eseential components, and capable of suppressing and eliminating the foam generated by the heating of an aqueous solution of vegetable proteins such as soybean and the foam generated by the pouring of soya milk. CONSTITUTION:The objective defoaming agent for bean curd is obtained by compounding (A) one or more esters of a polyricinoleic acid composed of 2- 10mol of polymerized ricinoleic acid and glycerol, polyglycerol, sorbitol, propylene glycol and sucrose, with (B) a soybean phospholipid, (C) one or more kinds of the above inorganic salts, and (D) an animal or vegetable oil or fat, as essential components. The amounts of the components A, B, C and D are 2-50(wt)%, 2-50%, 2-50% and 5-60%, respectively. Foaming of the bean curd during the preparation of cotton-strained bean curd, silk-strained bean curd, freeze-dried bean curd, soya milk drink, etc. can be suppressed by the use of the defoaming agent. |
