<P>PROBLEM TO BE SOLVED: To provide a method for producing a Helicobacter pylori antibody-containing yoghurt, which prevents decrease of antibody titre of a Helicobacter pylori antibody and decrease of fungus eliminating effect of Helicobacter pylori which are brought with production of the Helicobacter pylori antibody-containing yoghurt. <P>SOLUTION: This method for producing the Helicobacter pylori antibody-containing yoghurt comprises, on the basis of such knowledge that when a mixing temperature at which Helicobacter pylori antibody-containing yolk liquid is mixed with yoghurt base and agar syrup and a holding temperature at which the mixture is held thereafter exceed 37°C, decrease of antibody titre of Helicobacter pylori antibody occurs, bringing the upper limit of the mixing temperature and holding temperature to 37°C and bringing the lower limit of the mixing temperature and holding temperature to the lower limit temperature 32°C of agar to be used for agar syrup through using the agar coagulating at a low-temperature of a coagulation point of about 35°C. As the result of this, yoghurt is free from decreasing antibody titre by mixing and from decreasing antibody titre by unpredictable long time storage in general, and showing excellent fungus eliminating effect of Helicobacter pylori. <P>COPYRIGHT: (C)2007,JPO&INPIT |
