PROBLEM TO BE SOLVED: To provide a hot water tapping control method and a hot water tapping control device for a hot water storage type water heater capable of outputting hot water of desired temperature and flow rate in a stable state in the hot water storage type water heater. SOLUTION: A temperature of hot water stored in a hot water storage tank, a temperature of supplied water mixed with the hot water, a set temperature and a desired set flow rate of hot water tapping are stored in advance as data. A mixing ratio of hot water and supplied water is controlled, and the tapped hot water is output from a faucet on the basis of the stored data only by setting the necessary hot water tapping temperature and hot water tapping flow rate by a user. The temperature of hot water tapped from the faucet is detected, and the data is rewritten to be used as a next set temperature. When the temperature is requested as the set temperature, the mixing ratio of hot water and supplied water is controlled on the basis of the written set temperature to output the tapped hot water.
