A new 5-D-fructose dehydrogenase, optionally in combination with invertase, maltase and/or glucose isomerase, preferably in the form of a pharmaceutical composition, is useful in medicine. Independent claims are: (1) a pharmaceutical composition comprising 5-D-fructose dehydrogenase, optionally in combination with invertase, maltase or glucose isomerase; (2) a medical device comprising 5-D-fructose dehydrogenase, optionally in combination with invertase, maltase or glucose isomerase; (3) a foodstuff comprising 5-D-fructose dehydrogenase in combination with invertase, maltase or glucose isomerase; (4) a special foodstuff comprising 5-D-fructose dehydrogenase in combination with invertase, maltase or glucose isomerase; (5) a process for treating a foodstuff; (6) a human-ingestible composition of matter which comprises an enzyme that converts D-fructose into a form that is biologically inactive in the human body or a mixture of such enzymes, that cannot be digested in the human digestive tract, or that is not metabolizable in the human body; (7) a composition of matter comprising 5-D-fructose dehydrogenase admixed with a human-ingestible substance; (8) a method of treating fructose intolerance or impaired fructose metabolism; (9) a method of treating fructose intolerance or impaired fructose metabolism; (10) a method for diagnosing fructose intolerance; (11) a kit comprising an enzyme that converts D-fructose into a form that is (a) biologically inactive in the human body, (b) not digestible in the human digestive tract and (c) not metabolizable in the human body, or a mixture of such enzymes, and instructions explaining how to use the enzyme or mixture to diagnose or treat fructose intolerance; and (12) a method for preparing a reduced-fructose foodstuff.
