<P>PROBLEM TO BE SOLVED: To provide a composition of vegetable oil and fat having low trans acid, which is composed of vegetable oil and fat, provided with a moderate viscosity when charged, even if having ≤3 mass% of the content of the whole trans acid, and favorable in its plasticity and meltability in the mouth. <P>SOLUTION: The composition comprises 70-80 mass% of the following ingredient (A), 8-20 mass% of the following ingredient B, 7-20 mass% of the following ingredient C and 1-3 mass% of the following ingredient D, wherein the mass ratio of the ingredient B to the ingredient C is 1:(0.3-2): the ingredient A comprises liquid vegetable oil and fat; the ingredient B comprises extremely hydrogenated vegetable oil and fat containing ≥35 mass% of 12C saturated fatty acid having a melting point of 32-42°C; the ingredient C comprises vegetable oil and fat-derived ester exchange oil and fat containing 10-30 mass% of 12C saturated fatty acid and having a melting point of 30-40°C; and the ingredient D comprises hydrogenated vegetable oil and fat having an iodine value of 40-65 and containing 20-40 mass% of 18C saturated fatty acid having a melting point of 42-48°C. <P>COPYRIGHT: (C)2007,JPO&INPIT |
