Method and system for portioning workpieces to user-scanned shape and other specifications

Methods and systems for portioning a workpiece into one or more pieces are disclosed. The workpiece is scanned and a cut path is automatically determined with regard to a reference shape, to portion the workpiece into one or more pieces having the reference shape. A template of the reference shape may be scaled up or down until a user-defined parameter, such as the weight of the resulting portion(s), is satisfied. The workpiece is then portioned according to the cut path.
