PROBLEM TO BE SOLVED: To provide a process for mass-producing a recombinant protein by a liquid culture method using a koji mould as host. SOLUTION: The process for producing the recombinant protein by using a recombinant koji mould which is obtained by transforming a koji mold employed as the host is characterized by comprising culturing the recombinant koji mould in a liquid medium containing at least one starting material for the culture selected from among cereals which are entirely or partly surface-coated with the seed coat, beans and/or potatoes which are surface-coated with the outer skin, and amaranthus and/or quinua having been subjected to no pretreatment (for example, grinding or milling), and then harvesting the recombinant protein from the cultured product.
