PROBLEM TO BE SOLVED: To provide a method for producing retort food comprising masking resin smell of a container so as to keep the flavor of food favorable as it is without making the resin smell get into the food, even if a container composed of a multilayer structure having an oxygen-absorbing layer is used for the retort food, and also even if the retort food is stored for a long time. SOLUTION: The method for producing retort food comprises charging 40-100g of food into the container composed of a multilayer structure having a resin layer and an oxygen absorbing layer to which an oxygen absorbing agent having deoxidization function is added, sealing the container charged with the food, and subjecting the food to retort treatment, wherein 30-80 vol.% of the head space of the container is substituted with carbon dioxide and the container is hermetically sealed and subjected to retort treatment.
