<p><P>PROBLEM TO BE SOLVED: To provide a beer-like sparkling alcohol beverage not using malt and barleys. <P>SOLUTION: This process for producing the beer-like sparkling alcoholic beverage, comprising fermenting a prefermentation solution, is characterized in that a raw material solution good in fermentation efficiency is used to obtain the beer-like sparkling alcoholic beverage having good in various characteristics such as a flavor and a bubble quality. Further, the process for producing the beer-like sparkling alcoholic beverage is characterized in that the prefermentation solution is loaded with a pea protein obtained by extracting peas. The process for producing the sparkling alcoholic beverage comprises using a carbon source-containing syrup, a nitrogen source, a soybean protein degradation product as at least one part of the nitrogen source, a hop, and water as raw materials, and, if necessary, a coloring matter, a foaming/froth duration improver and a perfume to prepare the raw material solution, and then adding a beer yeast to the raw material solution similarly to a usual beer-producing process to alcohol-ferment the raw material solution. <P>COPYRIGHT: (C)2007,JPO&INPIT</p> |
