<P>PROBLEM TO BE SOLVED: To provide a method for producing frozen fish meat block intended for solving such problems that in the case of fish meat block obtained by thawing frozen original fish followed by casing and freezing, moisture in fish meat flows out and also deliciousness is damaged and decrease of yield is caused in an earlier process and freezing, and in the case of a fish meat press-forming method in a frozen condition, stickiness of fish meat is poor, and workability thereafter may be damaged, and reserving and decrease of workability are caused. <P>SOLUTION: This method for producing the frozen fish meat block comprise arranging a steam jetting nozzle 3 on the side of an upper mold 1 of a press machine, and jetting steam when pressing frozen fish meat. The press mold and the steam jetting nozzle may each have a round or auxiliary shape, and the steam jetting nozzle may be arranged on the side of a lower mold 2 of a press machine. <P>COPYRIGHT: (C)2007,JPO&INPIT |
