<P>PROBLEM TO BE SOLVED: To provide a method for producing a taste-adjusting agent and dressing each having citrus flavor and favorable bitter taste at someone's request through decreasing cost. <P>SOLUTION: This method for producing the taste-adjusting agent comprises treating/liquefying skin of citrus or whole citrus with polysaccharides splitting enzyme.
