摘要 The present invention provides a chilled bakery product comprising a bread-type dough component and a filling component, wherein the bakery product has a water activity (a w ) of more than 0.95 and the dough component after baking has a pH of less than 7. The invention also provides a process of manufacturing the bakery product of the invention.
