<P>PROBLEM TO BE SOLVED: To provide Flammulina veluptipes bavarois produced by solving the following problem: there is few commercial products of Flammulina veluptipes processed as desserts or afternoon snacks and the Flammulina veluptipes is not utilized as a raw material for moose or bavarois in the past while recognized as a food with a variety of healthy functions. <P>SOLUTION: The Flammulina veluptipes bavarois comprises healthy confectionery produced using the Flammulina veluptipes as a main material, or mannan-added Flammulina veluptipes confectionery. In the Flammulina veluptipes bavarois, addition of the mannan results in solving the problem of syneresis and quality keeping which are the cause of non-commercialization of the Flammulina veluptipes. <P>COPYRIGHT: (C)2007,JPO&INPIT |
