<P>PROBLEM TO BE SOLVED: To provide a production method of foods and drinks containing a significant amount of γ-aminobutyric acid (GABA) (for example, breads such as sour bread). <P>SOLUTION: The production method comprises adding a mesophilic lactococcus strain and thermophilic lactobacillus/lactococcus strain to a blended raw material and being fermented. Bacteria of Streptococcus thermophilus as the thermophilic lactococcus strain, and bacteria selected from a group consisting of bacteria of Lactobacillus typically as the bacillus, are used, and bacteria of Lactococcus are used typically as the mesophilic lactococcus. <P>COPYRIGHT: (C)2007,JPO&INPIT |
