PROBLEM TO BE SOLVED: To provide a method for producing dairy products comprising both of transglutaminase treatment and emulsification treatment to modify the quality of dairy products, wherein reactivity of the transglutaminase is improved. SOLUTION: The method for producing dairy products comprises adding transglutaminase to milk or milk-containing solution to act on each other followed by performing an emulsification process. The method is extremely useful in a food-product field because reactivity of the transglutaminase can be improved and the dairy products can be more inexpensively produced.
