EMULSIFYING AGENT AND EMULSION COMPOSITION PREPARED WITH THE SAME

An emulsifying agent which contains gum arabic and has high emulsifying power; and an emulsion composition having excellent emulsion stability. The emulsifying agent comprises a combination of 10 parts by weight of gum arabic and at least 0.5 parts by weight of gum ghatti. The emulsion composition can be prepared by conducting a step in which a combination of 10 parts by weight of gum arabic and at least 0.5 parts by weight of gum ghatti is used as an emulsifying agent to disperse a hydrophobic substance in a hydrophilic solvent or disperse a hydrophilic substance in a hydrophobic solvent.
