<P>PROBLEM TO BE SOLVED: To provide a method for cooking noodles by which the same flavor and palate feeling as those of non-dried noodles can be obtained even when passing through processes of freezing and thawing while they are preservable in a certain period. <P>SOLUTION: The method for cooking noodles comprises gradually freezing non-dried noodles down until having a predetermined temperature to preserve the frozen noodles followed by gradually thawing the noodles under refrigeration, leaving the thawed noodles at normal temperature, and boiling up the noodles. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
