<P>PROBLEM TO BE SOLVED: To provide a plastic oil and fat composition prepared using as an oil and fat material only oil and fat which substantially has no trans acid residue, and suppressing oil and fat crystals in preservation from becoming bulky. <P>SOLUTION: This plastic oil and fat composition is prepared by using as an oil and fat material only oil and fat which substantially has no trans acid residue and formulating fatty acid ester of glycerin. The fatty acid ester of glycerin (1)contains ≥10 wt.% of palmitic acid, ≥90 wt.% of palmitic acid and stearic acid, and no trans acid in 100 wt.% of fatty acid constituting the fatty acid ester of glycerin, and (2) contains ≥50 mass% of diester body and ≤5 mass% of monoester body in 100 mass% of the fatty acid ester of glycerin. <P>COPYRIGHT: (C)2007,JPO&INPIT |
