PROBLEM TO BE SOLVED: To provide a method for culturing an edible mushroom in which cabbage waste is economically and efficiently recycled and a problem of scattering of spores which occurs when culturing Pleurotus eryngii in a culture medium using coffee extract waste as a main raw material is solved. SOLUTION: The method for culturing the edible mushroom by cabbage-containing culture medium comprises inoculating spawn of the edible mushroom into a culture medium in which a coffee extract waste is replaced with finely cut cabbage in 30-80% volume substitution ratio, in the culture medium using the coffee extract waste as a main raw material.
