PROBLEM TO BE SOLVED: To provide a method for producing a flour-containing dough from which a flour-containing swelled food such as a pie hardly broken and having shape-keeping properties and excellent meltability in the mouth regardless of formed layers resembled to a folded pie is formed easily by a simple method. SOLUTION: The method for producing the flour-containing dough involves adding a plastic oil and fat composition having a large volume per unit to the flour, and kneading and mixing the resultant mixture. Preferably, the volume of the plastic oil and fat composition is 15-1,500 cc. The method for producing the flour-containing swelled food involves baking the flour-containing dough.
