FIELD: food-processing industry, in particular, public catering, flour milling and canned food industry. ^ SUBSTANCE: method involves separating seeds; washing, drying, grinding and cooking seeds; mixing components and forming mixture; after seed washing process, providing germination of seeds; after grinding of germinated seeds, performing air-sieve separation and grinding for producing of bean flour; after mixing of cooked bean pulp with components, performing whipping for 3-5 min; after forming, performing freezing at temperature of at least -18 C to temperature of -7 C within geometric center of product. ^ EFFECT: reduced seed losses due to replacement of hulling process by air-sieve separation process, reduced time for hydrothermal seed processing and cooking of bean pulp, prolonged shelf life and high consumer properties of product. ^ 7 cl, 5 tbl |
