Provided are grape-containing noodles, which have good resilient surfaces and a soft texture, exhibit a maximal efficiency of grape and beet, improve eater's health, and prevent adult diseases and other diseases, and a manufacturing method thereof. The method for manufacturing grape-containing noodles comprises the steps of: immersing 400g of chopped grape in 3000ml of hexagonal water with a temperature of 40‹C for 48 hours, mixing the resultant exudate with 500ml of milk and 10 eggs evenly, and maturing the mixture; adding 300ml of cooking oil, 50g of vegetable margarine, 50ml of olive oil, 25g of baked coarse salt, and 25g of baked fine salt to the matured mixture, mixing the admixture evenly at 36‹C using a whisk, and heating the mixture; mixing the resultant material with 10000g of wheat flour to be kneaded for about 1 hour, maturing the paste in a maturing room at 3‹C for 24-30 hours and 20‹C for about 5 hours; wrapping the obtained paste with vinyl to be fermented at 20‹C; kneading the fermented paste for 30minutes to be wrapped with vinyl, and then maturing the wrapped paste in a maturing room at 3‹C for 20-30 hours; stripping the vinyl from the paste, wrapping the paste with cloth, and maturing the paste at 20‹C for 5 hours; kneading the matured paste for 30-40 minutes; forming the paste into noodles using a noodle-making machine; and maturing the noodles in a maturing room at 3‹C for about 5 hours. |
