Disclosed is a novel acid-resistant mutant S-hydroxynitrile lyase (SHNL). Specifically, the SHNL can be produced by substituting at least one amino acid residue selected from amino acid residue 36, amino acid residue 140 and amino acid residue 209 in the amino acid sequence of wild-type SHNL (SEQ ID NO:2) by other amino acid residue. The SHNL shows an improved acid resistance compared to wild-type SHNL.
