The invention relates to a versatile jamonero ham holder which is formed by an L-shaped structure or support consisting of a long horizontal base (2) on which it rests, a shorter vertical segment (3) comprising one or more bars and an angular reinforcing support (42) which is solidly connected to a rotational and/or translational shaft (18) which can be used to rotate and move the ham holder, said holder also comprising the necessary means for fixing and securing the ham. The aforementioned means take the form of upper fixed or moving hoof clamps (5, 6) and lower hind-quarter clamps (9), which can be inclined and telescopically extended and which are equipped with prongs on the inner face thereof. Said clamps are also provided with quick clamping levers (13, 14). The invention also comprises telescopically-extendible vertical cutting-prevention protectors (17), end-of-travel and anti-stain protectors (16) and a magnetised groove (52) in the form a receptacle for the cutting knife among other improvements. The inventive ham holder can take the form of an independent item, can be built into a piece of furniture or can be equipped with means for fixing same to an existing structure.
