A food preparation is obtained by mixing crushed and malted barley, oats, rye, wheat, rice, maize, millet, buckwheat or other grain with honey and then treating in the presence of a catalyst in an autoclave or under high vacuum, the product being lixiviated, freed from albuminous substances causing cloudiness and finally evaporated under vacuum. Catalysts used include salts of sodium and calcium, e.g. sodium bi-phosphate, and concentrated hydrochloric acid. The albuminous substances can be eliminated by heating and lixiviating or by employing kieselguhr or a filter press. In an example, a mixture of malted barley and honey is treated in an autoclave or under high vacuum for 1-2 hours with constant stirring at 30 DEG C. and is then kept at 50 DEG C. for 10 minutes, after which it is lixiviated, refined and evaporated under vacuum at 45 DEG C. giving a uniform honey-coloured product which can be easily spread on bread &c. |
