PROBLEM TO BE SOLVED: To provide an image processing method in interference measurement, capable of carrying out measurements using a single sheet of image data. SOLUTION: This image processing method includes a first processing for executing processing for setting the luminance data of the highest brightness out of a prescribed picture element and a plurality of pixels adjacent to the pixel, as luminance data of the pixel, for all the pixels, based on the luminance data of the each pixels in a fringe image obtained by an interference measuring instrument provided with an imaging means; a second processing for executing the first processing with the prescribed frequency; a third processing for executing processing for setting a luminance data of lowest brightness out of the prescribed pixel and the plurality of pixels adjacent to the pixel, as a brightness data of the pixel, for all the pixels, based on the luminance data of the each pixel obtained by the second processing; a fourth processing for executing the first processing with the prescribed frequency; and a fifth processing for binarizing the each luminance data obtained in the fourth processing and for selecting the pixel, corresponding to one of binarilzed values.
