Provided is a method for preparing a tile fish treated with a ginseng extract to reduce the fishy smell and unpleasant odor during storage, to prevent the acidification during circulation and to improve taste. The method comprises the steps of salting a tile fish in an antibacterial agent comprising the brine obtained by dissolving salt in purified water, a ginseng extract and an organic acid and firstly drying the tile fish; and soaking the tile fish in the mixture solution comprising the brine and a sugar alcohol as a moisturizer and secondly drying the tile fish. Preferably the antibacterial agent comprises 8-15 % brine, 3-5 % of a ginseng extract and 3-5 % of an organic acid; the sugar alcohol comprises at least one selected from sorbitol, maltitol, mannitol, glycitol, erythritol, ribitol, xylitol, galactitol and hydrogenated starch syrup; and the organic acid is at least one selected from acetic acid, citric acid, tartaric acid, malic acid, succinic acid and benzoic acid. |
