To test a meter (1), e.g. to monitor the condition of deep frying oil, the physical values, e.g. the permittivity, are measured at least at two different temperatures. The two different values against known effects of temperature show how well the meter is calibrated. The measurements are taken a number of times as the oil is heated and allowed to cool.
