摘要 <P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing soy sauce using liquid rice malt through developing such liquid rice malt as to have enough enzymatic activity required for production of soy sauce by using the liquid rice malt. <P>SOLUTION: The method for producing soy sauce using liquid rice malt comprises using liquid rice malt, wherein culture raw material comprises liquid rice malt obtained by culturing Aspergillus oryzae with at least one kind of a liquid culture medium selected from liquid culture medium comprising crops the whole or part of the surfaces of which is covered with cereal skin, a liquid culture medium comprising beans and/or corms the surfaces of which are covered with outer skin, and a liquid culture medium comprising amaranthus and/or quinoa not subjected to pretreatment such as grinding or pulverization. <P>COPYRIGHT: (C)2007,JPO&INPIT
