A method and apparatus for forming a proteinaceous emulsion or batter into a shaped food product without the use of a casing. A suitable supply of emulsi on (50) is provided and conveyed under pressure into an elongated hollow stuffi ng tube (20) to form a continuous length shaped emulsion. Thereafter the shaped emulsion is directed into a molding tube (70) which is slideably mounted abo ut said stuffing tube. A treating fluid from a supply (60) is directed to the interior surface of the stuffing tube to continuously wet the interior of th e molding tube and thereby form a proteinaceous skin about the shaped emulsion .
