A method for producing functional grains having an increased content of gamma-aminobutyric acid(GAVA) is provided to prevent a loss of active materials, generate no wastewater, and maintain a GAVA content accumulated during a sprouting step. The method for producing functional grains having an increased GAVA content comprises the steps of: adding water to grains 3-5 times a day at 0.5-3 hour intervals step by step so as to have a final moisture content of 25-35% without producing wastewater; performing a 0.5-3 hour anaerobic treatment and a 0.5-2 hour aerobic treatment 2-3 times during or after the step-by-step water addition; and additionally carrying out an anaerobic treatment for 10-15 hours. |
