A lifting roll for the loaves is located beneath a conveyor belt and designed to be raised when the loaves travel along this conveyor. An apparatus for separating bread or other bakery products which have been baked together and are joined together comprises a transport trajectory (11) with devices for lifting some of the loaves so that at least one in every two adjoining loaves is rotated in the opposite direction to the other loaf in the pair, the rotation axis extending substantially parallel to the joint between the loaves. The lifting device comprises a lifting roll located beneath a conveyor belt in a first conveyor and designed to be raised when the loaves travel along this conveyor. An independent claim is also included for a second apparatus for separating bread or other bakery products which have been baked together and are joined together, comprising a transport trajectory which includes a separation step where the loaves are completely separated. This step uses an upstream conveyor belt and a relatively faster downstream conveyor belt. At least one of these belts includes a vacuum zone at the end nearest to the other belt.
