This invention pertains to the field of food industry and could be used for making bread or bakery products characterized by enriched biological value. Corresponding mentioned invention the bread containing additive of biologically enriched grain is baked from flour, biologically enriched grain, whey, salt, sweetener, e.g., sugar. According described invention the whey is added in form of fermented quark-whey and complementary there is added yeast. There is described method for producing biologically enriched grain as well as proportionality of all components (in weight ratio).
