A composition comprising an extract of roasted Licorice is provided to inhibit expression of iNOS, COX-2 enzyme and protein, generation of TNF-alpha and IL-6 and decomposition of Ikappa-B controlling the activity of NF-kappaB which is an inflammation nuclear factor, thereby capable of being effectively treating and preventing inflammation. The pharmaceutical composition or health functional food for preventing and treating colitis, gastritis, esophagitis or Rheumatoid arthritis comprises a 70-100% ethanol extract of roasted Licorice as an effective ingredient.
