A method for processing fruit-and-berry raw material includes washing, milling of fruit-and-berry raw material, mixing of obtained product with foam stabilizer and unwatering of obtained foam to balanced moisture capacity. At unwatering the raw material is placed into a functional reservoir which walls are made of steam-tight material and average integral temperature of raw material is brought to value of no more than 70 oC.
