<P>PROBLEM TO BE SOLVED: To provide a sheet-like water-in-oil emulsified oil-and-fat composition used for confectionery making or bread making, having good workability, rich in butter flavor, and containing milk fat whose after-baked aroma has favorable butter flavor. <P>SOLUTION: The sheet-like water-in-oil emulsified oil-and-fat composition comprises milk fat obtained by fractionation of milk fat where at least one kind selected from the group comprising butter, fermented butter, fresh milk, cow milk, special cow milk, cream and fermented cream, and contains 10.0-35.0 wt.% of milk fat having a rising melting point at 38.0-42.0°C, 60.0-75.0 wt.% of a solid fat content at 10°C, and 25.0-40.0 wt.% at 30°C, and 10.0-35.0 wt.% of milk fat having a rising melting point at 3.0-7.0°C, and 0.0-4.0 wt.% of solid fat content at 5°C, or 0.0 wt.% at 10°C.
