Provided is a method for preparing blocked freeze-dried doenjang(fermented soybean paste) to improve productivity and taste without increasing the added water content. The method comprises the steps of adding water doenjang and mixing them to prepare hydrated doenjang; filling the hydrated doenjang into a molding container(10) which has a reversed cone shape; cooling the hydrated doenjang to cure it; and freeze-drying the cured doenjang. The molding container is such that its lower part is narrow, its upper part has a wide aperture, and a plurality of grooves(11) is formed at the side wall of the internal circumference so as to be continuous from the lower part to the upper part. |
