PROBLEM TO BE SOLVED: To provide a method of manufacturing an electrode foil capable of easily removing burrs that occur when the electrode foil is cut off, and to provide a method of manufacturing an electrolytic capacitor using the same. SOLUTION: The method of manufacturing an electrode foil includes: a step of forming an electrode foil roll of prescribed width after the electrode foil is cut off; and a step of subjecting the cut end face of the electrode foil to a polishing treatment as it is kept in the state of a roll. Or, it includes: a step of forming an electrode foil roll of prescribed width after the electrode foil is cut off; a step of subjecting the cut end face of the electrode foil to a polishing treatment as it is kept in the state of a roll; and a step of using the electrode foil at least as either a positive electrode foil or a negative electrode foil and rolling a positive electrode foil and a negative electrode foil into a roll to make them confront each other through the intermediary of a separator.
