PROBLEM TO BE SOLVED: To provide tea extract solving the following problems caused in generally performed flavor enhancement through use of tea hot-water extract or tea concentrated solution or addition of ground tea, aroma and/or the like when imparting tea flavor to food and drink, so as to provide raw material enhancing the tea flavor: use of the tea extract or the tea concentrated solution does not enable expected flavor enhancement while astringency is imparted; addition of ground tea into a drink results in causing precipitation, getting worse in smoothness through the throat and being liable to vary in color tone; and addition of aroma is not satisfactory because there is no aroma satisfactory in enhancement of scent inherent in tea leaves, and the flavor seems to be dissociated from the tea drink with time. SOLUTION: The tea extract is obtained through making tannase andβ-glycosidase act on the tea extract obtained from tea leaves. COPYRIGHT: (C)2007,JPO&INPIT
