摘要 Provided are a method for preparing rice flour for instant food to remove the specific odor of rice flour and to improve taste, the rice flour prepared by the method, and a rice soup containing the rice flour. The method comprises the steps of mixing the pre-mixing water containing salt with rice; tempering the mixture at a temperature of 50 deg.C or less; swelling the mixture; and pulverizing the swollen rice. Preferably the mixture comprises 3-15 parts by weight of the pre-mixing water containing salt based on 100 parts by weight of rice; and the swelling is carried out at a temperature of 100-150 deg.C with a velocity of 60-200 rpm.
