PROBLEM TO BE SOLVED: To provide an efficient extraction method of an organic substance applying no load to environment using biomass as a raw material, and a simple extractor of the organic substance therefor. SOLUTION: The extraction 100 of the organic substance is equipped with a steam producing means 10 for producing dry steam, which has steam density lower than that of saturated steam, from water, a reactor 20 for extracting the organic substance from the biomass put therein and a steam sending means 30 for sending the dry steam into the reactor.
