The invention concerns a method for producing lactose from whey or a permeate derived from ultrafiltration of whey, comprising steps which consist in: (a) substituting at least part of the multivalent cations of the whey or permeate with monovalent metal cations, to obtain a whey or permeate depleted in multivalent cations, (b) substituting at least part of the multivalent inorganic anions and organic acid anions of the whey or permeate, with monovalent anions not capable of forming complexes with the mulitvalent cations, said step (b) being carried out prior to or simultaneously with step (a), and (c) crystallizing the whey or permeate derived from steps (a) and (b), to obtain crystallized lactose and filtrates enriched with monovalent metal cations.
