A method of processing meat is provided to improve consumer's taste with respect to the various meat by softening flesh of the meat, and removing off-flavor of the meat and adding fragrance. The method of processing meat comprises the steps of: inputting an additive and water in the weight ratio of 0.01-1.5 to 1 in a mixer(S10); generating an additive mixture by mixing the inputted additive and water at a temperature of 4-85deg.C for 5-20minutes(S20); collecting the additive mixture in a mixture injecting device having a pump and plural injectors by the pump(S30); transferring the meat using a conveyor installed below the mixture injecting device(S40); injecting the additive mixture into the meat transferred by the conveyor using the injectors of the mixture injecting device(S50); and packing the meat that the injection of additive mixture is finished(S60). |
