<P>PROBLEM TO BE SOLVED: To provide a soybean beverage containing substantially all of the nutrients of the soybean, a sensuously excellent in feeling to the mouth, delicious, and capable of being excellently digested and absorbed, to provide a method for easily producing the beverage, to provide a soybean curd-like food, to provide a method for producing the food, and to provide a processed soybean powder material for the beverage and the food, having no smell of raw vegetation, capable of being prevented from heat denaturation of proteins to the least possible extent, and having such excellent processability and solubility that the objective soybean beverage, etc., is produced by only dissolving, dispersing or homogenizing the material in water. <P>SOLUTION: This processed soybean powder material is obtained by subjecting raw soybeans to heat treatment, wherein the material has a water-soluble nitrogen index of 55-70 and an LOX (lipoxygenase) value of ≤20, does not contain or scarcely contains n-hexanal, and has a Brix value of 3.0-6.0. <P>COPYRIGHT: (C)2004,JPO |
