FIELD: food-processing industry; devices for dispersion and homogenization, as well as for mixing liquid food mixtures for production of highly dispersed emulsions, milk products, food pate, different drinks. ^ SUBSTANCE: proposed dispergator has housing with passage for motion of liquid food mixture and devices causing cavitation when liquid mixture flows around them. Passage for motion of liquid food mixture is provided with at least one partition for dividing the flow of liquid food mixture. Surface of partition which gets in contact with food mixture flow is provided with riffles or alternating projections and recesses. ^ EFFECT: improved quality of dispersion; reduction of time required for dispersion process. ^ 8 cl, 9 dwg
