IMMOBILIZED BIOCATALYST IN SPENT GRAINS AND INDUSTRIAL USE OF SAME BIOCATALYST IN ALCOHOLIC FERMENTATION FOR THE PRODUCTION OF ALCOHOL AND ALCOHOLIC BEVERAGES

The immobilization of the yeasts and/or bacteria in fresh and/or unfrozen spent grains in the presence or absence of nutritional substances give a biocatalyst suited for the fermentation of sugar solutions utilised for the production of alcohol and alcoholic beverages (wine, beer etc). The fermentation will be realized into reactors via repeated fermentation batches or fed-batch fermentation or continuous alcoholic fermentation. The immobilized biocatalyst may be presented in liquid and /or lyophilised form and distributed into the bioreactor at one or several levels. The use of immobilized bioreactor increases -in comparison to the traditional fermentation- the rapidity of the alcoholic fermentation and, thereby, the alcohol production, and gives a quality product with organoleptic properties in a wide scale of temperatures.
