<P>PROBLEM TO BE SOLVED: To provide food material derived from gelatinized substance comprising konjak flour or purified glucomannan, promoting everyone's health maintenance/promotion through supply/generalization of a glucomannan-containing food easy to eat produced by mixing a food raw material obtained by subjecting gelatinized substance comprising konjak flour or purified glucomannan to freezing, thawing and dehydration, and thereafter to pressure application for remarkably improving the texture thereof, with another food material, or by other means. <P>SOLUTION: The food material is produced through the following process: subjecting a gelatinized substance obtained by adding a coagulant alkali substance to the gelatinized substance comprising konjak flour or purified glucomannan to freezing, thawing and dehydration, and thereafter to pressure application at least once because of exhibiting extremely poor texture if applying no pressure so as to obtain a food raw material with remarkably enhanced texture. The food material where texture of food raw material having impossibility for distribution or sale as an actual commercial product is remarkably improved, results in production of highly-qualified texture-improved healthy fast food or general processed food through being mixed with other food materials, or by another method. <P>COPYRIGHT: (C)2007,JPO&INPIT |
