<P>PROBLEM TO BE SOLVED: To provide seaweed extract having further natural favorable flavor without having seaweed green smell, fishy smell, astringency or harsh taste, and to provide food and drink containing the seaweed extract. <P>SOLUTION: A method for producing the seaweed extract comprises chopping seaweed such as sea lettuce, tangle, laver, Monostroma nitidum, and brown seaweed, extracting the seaweed in an alcohol solvent such as hydrous ethanol for 8-96 h at -25°C to 5°C, and removing the solvent from the extracted solution. A method for seasoning food and drink comprises adding the seaweed extract to the food and drink. As a result of this, it is possible to give the food and drink strong gustatory feeling and to obtain a delicious food and drink product which sustains flavor inherited from the food and drink. <P>COPYRIGHT: (C)2007,JPO&INPIT |
